A single tasting menu, built from the produce of West Cork and the spice routes of Anatolia.
Welcome to Dede at the Customs House — a two-star Michelin restaurant on the West Cork coast. Chef Ahmet Dede cooks one tasting menu, for lunch and for dinner, created with Turkish and Irish seasonal ingredients and inspiration drawn from both.

Ahmet Dede
Raised in Turkey and at home on the Irish coast, Ahmet brings two food cultures to one table. His mostly Turkish brigade plates each course with quiet pride — a refined take on the street-food içli köfte, layers of authentic flavour that never overpower the core ingredient.
Co-owner Maria Archer runs the room, and her welcome has become the restaurant's signature — an evening that feels closer to dining in a friend's home than a Michelin room, in a coastal village at the edge of Europe.

The Tasting Menu
One constantly-changing seasonal tasting menu, served at both lunch and dinner. Vegetarian, pescatarian and vegan options are prepared on request — simply let us know of any dietary requirements or allergies when you book.
